There may not be the traditional New Year's Eve celebrations this year that we all enjoy - but that's no reason not to mark the new year altogether.

However, it is not compulsory to have a drink on New Year's Eve, but if you do decide to have a tipple or two, many of you may still wake up with a sore head. So, the team at Dark Bear Bar has shared with us thier hangover fixes.

Lloyd Brown and David Smith, of Dark Bear, have both been named UKBG best bartender 2020 for the South area, the first time is 18 years the awards have had joint winners. Well done both!

Red Snapper

Use up that leftover horseradish by grating one inch of fresh horseradish per 70cl of gin. Leave to steep for 24 hours and then strain. Bottled and left in the fridge this will last for a month.

To make the drink, mix together 50ml of the horseradish gin, 15ml of fresh lemon juice, six dashes of Tabasco, three dashes of Dorsetshire sauce, grind of salt, plenty of black pepper, dash of port and finally, a dash of chipotle hot sauce.

Top with 100ml of good quality tomato juice, stir with a slice of celery and leave to sit before topping with ice and giving a good stir.

You can also try a virgin Bloody Mary without the gin.

Breakfast Club

Named after the film and a great long drink for the day after, but first the day before…

Brew a cup of black Assam tea and then add to a saucepan with double the amount of sugar, heat and stir till displaced and set aside.

Next, to the last few tablespoons in the marmalade jar, top with dry gin, screw on the lid, shake and pop back in the fridge.

The day after, shake together 50ml of the marmalade gin - bits encouraged! - 25ml of fresh lemon juice, 15ml of the cooled Assam syrup, shake and fine strain into a tall glass filled with ice and then top with either soda or local fizz.

If you don't have time to prepare or know you won't have the energy, you can always take advantage of Dark Bear's New Year's Day brunch packs.

They include either a bottle of Red Snapper (70cl) horseradish gin, tomato, lemon, spices and Worcestershire sauce or Café Cubana, twin fin rum, Kahula, cinnamon syrup and fresh espresso. A loaf of Joe's sourdough bread is also included, along with a choice of Mrs Bumble's gin and tonic marmalade, Derwen organic eggs or Framptons bacon.

Of course, you can always stick to a fry up and black coffee - we also hear a banana is good for restoring you after a heavy night!
